V2rayTun on Android supports the classic per-app proxy: you tick the apps that should go through the VPN and the rest connect directly. Below is the step-by-step split tunneling setup in V2rayTun.

Tap the three lines (Menu) in the top-left corner.
Go to Settings.
In VPN Settings find the Per-app proxy option.
Toggle it ON.
Tap Per-app proxy itself and pick the apps you need from the list.
Save the settings and restart the connection.
